- 1 aubergine
- 2 tbsp. coconut oil
- 1/2 tsp salt
- 1/2 tsp pepper
- Slice the aubergine into 2 cm thick round slice
- Heat the coconut oil in a frying pan, cook the aubergine slices until fork tender on each side.
- Stack a burger/ black beans and feta burger and fillings between 2 slices and serve
You can also use tomato slices, hearty leaves, red pepper, cooked slices of sweet potatoes to hold your burger.
