1. Slice the aubergine into 2 cm thick round slice
  2. Heat the coconut oil in a frying pan, cook the aubergine slices until fork tender on each side.
  3. Stack a burger/ black beans and feta burger  and fillings between 2 slices and serve

You can also use tomato slices, hearty leaves, red pepper, cooked slices of sweet potatoes to hold your burger.
