05 Jul2016 Emilie Malik 0Breakfast Recipes Blueberries pancakesServes 2 150-200g blueberries 2tbsp coconut oil 2-4 tbsp. warm water 2 eggs 1-1 1/2 tbsp. maple syrup 2tbsp coconut flour 1/4 bicarbonate of soda vanilla extract sea salt Beat eggs, water, maple syrup,vanilla extract, salt in a bowl until fluffy. Add coconut flour and bicarbonate of soda to make a batter, leave to stir 5 minutes. Heat coconut oil in a pan and add 2 tbsp. of the batter, push the blueberries in the centre of the pancake. after a couple of minutes turn the pancakes over and cook the other side. Serve hot and enjoy !
