Serves 2
- 300g white fish i.e. Haddock or cod
- 1 tbsp Dijon French mustard
- 40g flaked almonds, coarsely chopped
- juice of 1/2 lemon
- chopped fresh parsley
- Himalayan salt, pepper
- 1tbsp extra virgin olive oil
- Preheat the oven to 200c.
- Combine almonds, lemon juice, parsley, salt, pepper and olive oil in a bowl.
- Place the fish in a oven dish, coat it with the mustard and press the mixture on top of the Dijon mustard.
- Bake the fish until opaque in the centre about 15-20 minutes.
Serve it with French ratatouille, greens beans, sweet potatoes or salad.
