- 200g High quality cooking chocolate
- 125g butter, softened
- Maple syrup (according to taste)
- 4 eggs, separated
- 50g ground almonds
- Break the chocolate into pieces in a pan and melt it with the butter.
- Separate the eggs, and add the yolks to the chocolate mixture together with the ground almonds and maple syrup. Mix well to combine.
- Whisk the egg whites until stiff and add to the batter, mixing gently.
- Put the batter into a 20cm round tin, and bake in a preheated oven at 180 C / Gas 4 for about 20 minutes or until done.
- Cool in the tin for about 15 minutes before inverting onto a plate.
- Decorate your cake with chocolate nibbles, nuts, fruits (any healthy topping!)
