1. Break the chocolate into pieces in a pan and melt it with the butter.
  2. Separate the eggs, and add the yolks to the chocolate mixture together with the ground almonds and maple syrup. Mix well to combine.
  3. Whisk the egg whites until stiff and add to the batter, mixing gently.
  4. Put the batter into a 20cm round tin, and bake in a preheated oven at 180 C / Gas 4 for about 20 minutes or until done.
  5. Cool in the tin for about 15 minutes before inverting onto a plate.
  6. Decorate your cake with chocolate nibbles, nuts, fruits (any healthy topping!)
