Serves 2
- Cooked green beans
- 2 diced tomatoes, or cherry tomatoes
- 1 salad onion sliced or red onion
- 1 or boiled eggs
- 1 medium sweet potato
- 160g tin of tuna in spring water (sustainable seafood)
- few black olives
- Fresh basil
- Boil green beans, sweet potatoes until tender, let them cool for 20 min
- Boil eggs for 10 min, let them cool off ( I normally cook them with beans and sweet potatoes, add them a bit later)
- In a salad bow add all the ingredients
- Season with French vinaigrette
