Serves 4
- 500g of chicken breast, skinless
- 1 beaten egg
- 180g ground almonds
- 1tbsp paprika
- 1 tsp ground cumin (optional)
- 1tsp dried thyme/ oregano (adjust to your taste)
- garlic powder (optional)
- Himalayan salt
- pepper
- Preheat the oven to 180c, line baking tray
- Mix the ground almonds with spices and salt, pepper in 1 bowl
- Dip the chicken pieces in the a bowl with beaten egg, then coat chicken with alounds mix and lay it on baking tray
- Drizzle the chicken with heated coconut oil (liquid)
- Bake for about 30 min until golden
Serve it with rainbow salad, great family dinner !
