02 Jul2016 Emilie Malik 0Sweet Snacks Recipes Peanut and date energy ballsMakes about 12 balls 1 cup of dry roasted peanuts, unsalted 10-12 medjol dates, chopped 2 tbsp. cocoa powder 1/4 tsp Himalayan salt Process peanuts in food processor (you can use nutribullet, vita-mix, etc) until crumbly with some larger pieces. Be careful not to process to long. Empty into a bowl. Process dates into small pieces, until very sticky and become a gooey mass. With dates, add nuts into food processor, along with cocoa powder. Pulse until mixed together. Do not over process. Scrape bowl once or twice. Roll the dough into balls. Keep in air-tight container and refrigerate.
