- 50g cooked quinoa
- 1/4 cucumber,diced
- spinach or mixed leaves
- 1/2 avocado
- 1/2 yellow pepper, diced
- 1/2 mango
- fresh mint leaves
- 6 cashews
- Dressing with olive oil, salt, pepper, lime juice, chili flakes
- Cook the quinoa following instructions on the box – 1 volume of quinoa for 2 volume of water until quinoa has absorbed the water ~15 minutes- let it cool off
- place rest of ingredients in a plate, add the quinoa and add the dressing
Perfect vegan lunchtime meal !
I cook the quinoa in a bigger quantity either to make a family meal or use it for other recipes such as tabouleh.
